Preparation
- Pat chicken dry with paper towels. Pound to even thickness if breasts are thick.
- Season lightly with salt and pepper.
Make the marinade
- In a bowl, whisk together olive oil, lemon juice, Dijon, minced garlic, smoked paprika, onion powder, and cayenne.
- Add chicken, coat thoroughly, and seal in a bag or covered dish.
Preheat air fryer
- Preheat the air fryer to 380–400°F (190–200°C) for 3–5 minutes.
Air fry the chicken
- Arrange chicken in a single layer in the basket—do not overcrowd.
- Cook at 380°F for 10–12 minutes; flip halfway.
- Check internal temperature: 165°F (74°C) for breasts, 170–175°F for thighs.
Rest and serve
- Transfer to a cutting board and rest for 5 minutes before slicing.
- Garnish with fresh herbs and a squeeze of lemon.
Notes
For best flavor, marinate overnight. Avoid overcrowding the air fryer basket for even cooking.
