  • 2 pieces boneless, skinless chicken breasts or thighs Chicken breasts or 4 thighs.
  • 2 tablespoons olive oil Can substitute with avocado oil.
  • 2 tablespoons lemon juice Substitute lime for a tangy twist.
  • 1 teaspoon Dijon mustard Optional; aids emulsification and flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika For grilled/char notes.
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon kosher salt Adjust to taste.
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne Optional for heat.

Method
 

Preparation
  1. Pat chicken dry with paper towels. Pound to even thickness if breasts are thick.
  2. Season lightly with salt and pepper.
Make the marinade
  1. In a bowl, whisk together olive oil, lemon juice, Dijon, minced garlic, smoked paprika, onion powder, and cayenne.
  2. Add chicken, coat thoroughly, and seal in a bag or covered dish.
Preheat air fryer
  1. Preheat the air fryer to 380–400°F (190–200°C) for 3–5 minutes.
Air fry the chicken
  1. Arrange chicken in a single layer in the basket—do not overcrowd.
  2. Cook at 380°F for 10–12 minutes; flip halfway.
  3. Check internal temperature: 165°F (74°C) for breasts, 170–175°F for thighs.
Rest and serve
  1. Transfer to a cutting board and rest for 5 minutes before slicing.
  2. Garnish with fresh herbs and a squeeze of lemon.

Notes

For best flavor, marinate overnight. Avoid overcrowding the air fryer basket for even cooking.
