Preparation
- Preheat your oven to 400°F (200°C) to ensure a crispy taco shell.
- In a skillet over medium heat, add a splash of olive oil and sauté diced onion and bell pepper until softened (about 2-3 minutes).
- Add the chicken, taco seasoning, and ¼ cup of water. Cook until the chicken is no longer pink, roughly 5-7 minutes.
- Once cooked, shred the chicken in the skillet using two forks, mixing it well with the sautéed veggies.
- Fill each tortilla with the chicken mixture and sprinkle with cheese.
Baking
- Place the filled tortillas on a baking sheet and bake for 10 minutes or until the cheese is bubbly and golden.
Serving
- Garnish with fresh cilantro, avocado, sour cream, and lime wedges.
Notes
If your sauce thickens, adding a splash of water will help. Consider swapping chicken for ground beef or shredded pork.
