  • 8-10 pieces crunchy or soft corn tortillas Use according to preference.
  • 1 cup shredded Cheddar or Mexican blend cheese For topping.
  • 1 each bell pepper Diced.
  • 1 each onion Diced.
  • 1 cup black beans For added texture and flavor.
Toppings
  • to taste fresh cilantro For garnish.
  • to taste sour cream For garnish.
  • 1 each avocado For garnish.
  • 1 each lime wedges For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) to ensure a crispy taco shell.
  2. In a skillet over medium heat, add a splash of olive oil and sauté diced onion and bell pepper until softened (about 2-3 minutes).
  3. Add the chicken, taco seasoning, and ¼ cup of water. Cook until the chicken is no longer pink, roughly 5-7 minutes.
  4. Once cooked, shred the chicken in the skillet using two forks, mixing it well with the sautéed veggies.
  5. Fill each tortilla with the chicken mixture and sprinkle with cheese.
Baking
  1. Place the filled tortillas on a baking sheet and bake for 10 minutes or until the cheese is bubbly and golden.
Serving
  1. Garnish with fresh cilantro, avocado, sour cream, and lime wedges.

Notes

If your sauce thickens, adding a splash of water will help. Consider swapping chicken for ground beef or shredded pork.
