Ingredients
  

For the Marinade
  • 1/4 cup olive oil
  • 1/4 cup lemon juice or lime for a tangy twist
  • 2 tablespoons honey Replace with agave syrup for a lower glycemic index
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon paprika
For the Chicken
  • 4 pieces boneless, skinless chicken breasts

Method
 

Marinate the Chicken
  1. In a large bowl, whisk together olive oil, lemon juice, honey, minced garlic, oregano, paprika, salt, and pepper.
  2. Add the chicken breasts and coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Tip: For deeper flavor, marinate overnight!
Prepare the Grill
  1. Preheat your grill to medium-high heat (about 375°F-450°F).
  2. Pro Tip: Lightly oil the grill grates to prevent sticking.
Cook the Chicken
  1. Place the marinated chicken breasts on the grill.
  2. Cook for 6-7 minutes on each side or until cooked through (internal temperature should reach 165°F).
  3. Troubleshooting: If your chicken is sticking, it’s a sign it’s not ready to flip yet!
Rest Before Serving
  1. Remove from the grill and let the chicken rest for about 5 minutes.
  2. Consider garnishing with fresh herbs and serve with lemon wedges for an extra pop of flavor.

Notes

This recipe is naturally gluten-free. To make it vegan, swap the chicken for grilled portobello mushrooms. Store leftovers in an airtight container in the fridge for up to four days.
