  • 4 large ripe bananas about 1 ½ cups mashed
  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 2 large eggs
  • ½ cup unsalted butter melted
  • 1 tsp vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash ripe bananas until smooth but chunky.
  3. Mix in melted butter, then beat in eggs one at a time and stir in vanilla extract.
Combining Ingredients
  1. In another bowl, whisk together flour, sugar, baking soda, and salt; gradually fold this dry mixture into the wet ingredients until just combined.
Baking
  1. Pour batter into the prepared loaf pan and smooth the top.
  2. Bake for 60 minutes or until a toothpick inserted comes out clean.
  3. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Slice the bread when it is cool or slightly warm. Serve plain, with butter, or cream cheese. It also goes well with a cup of tea or coffee. For storage, wrap the cooled loaf in plastic wrap or store in an airtight container. Keep at room temperature for 2–3 days. For longer storage, freeze slices wrapped in foil or plastic for up to 3 months. Thaw at room temperature or warm briefly in the oven.
