  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour or swap with whole wheat flour for more nutrition
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries frozen blueberries can be used, but expect a more moist cookie

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until fully combined.
  5. Gently fold in the blueberries, ensuring they are evenly distributed throughout the dough.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to wire racks to cool completely.

Notes

Substitute half the butter with applesauce for a lighter cookie. Use almond flour instead of all-purpose flour for a gluten-free version. Replace granulated sugar with honey or maple syrup for a natural sweetener option.
