  • ½ cup Buffalo Sauce Homemade or store-bought
  • 1 cup Breadcrumbs Use panko for extra crunch
  • 2 Eggs Beaten for coating
  • ½ cup Flour For dredging
  • Oil For frying (vegetable or canola oil recommended)
  • Optional: Blue cheese or ranch dressing For dipping

Preparation
  1. In a bowl, mix shredded chicken with buffalo sauce. Adjust the amount of sauce according to your spice preference.
  2. Take a string cheese stick, and wrap a generous amount of the buffalo chicken mixture around it. Make sure it’s well covered.
  3. Set up your dredging station with flour, beaten eggs, and breadcrumbs. Dredge the cheese-covered chicken in flour, dip in egg, then coat with breadcrumbs.
  4. In a frying pan over medium heat, add enough oil to cover the bottom. Once hot, add the sticks to the pan.
  5. Cook for about 2-3 minutes on each side, or until golden brown. If your sauce is too thick for dipping, add a splash of water to thin it out and enhance the flavor.

Notes

Consider using whole-grain breadcrumbs or baking the sticks instead of frying for a healthier version. Avoid overcooking the chicken to prevent dryness, and find the right balance of sauce to avoid leaking during frying.
