Method
 

Cooking the Pasta
  1. Cook the pasta according to package instructions. Drain and set aside, ensuring you reserve a bit of pasta water in case you want to thin the sauce later.
Prepare the Sauce
  1. In a large skillet, heat olive oil over medium heat until shimmering but not smoking.
  2. Add the smoked sausage and cook until browned, about 5 minutes.
  3. Add the chopped onion, bell pepper, and garlic; sauté until the vegetables are softened, which should take about 3–4 minutes.
  4. Stir in the shrimp and Cajun seasoning; cook until shrimp turn pink, approximately 3–4 minutes.
  5. Pour in the heavy cream and bring to a simmer. Let it thicken slightly, stirring frequently.
Combine and Serve
  1. Add the cooked pasta to the skillet, tossing to coat evenly with the sauce. If it appears too thick, add a splash of reserved pasta water.
  2. Season with salt and pepper to taste, adjusting as needed based on your preferences.
  3. Serve warm, garnished with chopped parsley for that fresh, vibrant finishing touch.
