Cheesy Pizza Pockets

Ingredients
  

Dough
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • ¾ cup water
Filling
  • 1 cup mozzarella cheese, shredded Substitute with dairy-free cheese for a vegan option.
  • ½ cup pepperoni, chopped Can use any protein of choice.
  • ½ cup pizza sauce Plus more for dipping.
  • to taste optional toppings (bell peppers, onions, olives, mushrooms) Add for extra flavor and nutrients.

Method
 

Prepare the Dough
  1. In a large mixing bowl, combine the flour, baking powder, and salt.
  2. Add the olive oil and water. Mix until it forms a dough.
  3. Knead the dough for about 2-3 minutes until smooth, then let it rest for a few minutes.
Roll Out the Dough
  1. On a floured surface, roll out the dough until it’s about ¼ inch thick. Cut into circles using a large cookie cutter or a mug.
Fill and Seal
  1. On one half of each circle, place a tablespoon of pizza sauce, followed by cheese and toppings. Leave the edges clear for sealing.
  2. Fold the dough over to create a pocket and pinch the edges to seal. For extra security, press a fork along the edges.
Bake
  1. Preheat your oven to 400°F (200°C) and place the pockets on a baking sheet lined with parchment paper.
  2. Bake for about 15-20 minutes or until golden brown and crisp.
Serve
  1. Let cool slightly, then serve warm with extra sauce for dipping. If your sauce is too thick, add a splash of water for a better consistency.

Notes

For healthier alternatives, consider using whole wheat flour and loading up with veggies. Avoid overfilling to prevent bursting during baking.
