Ingredients
  

For the Marinade
  • 1/4 cup fresh cilantro, chopped Use fresh cilantro for best flavor.
  • 2 pieces limes, juiced For a tangy twist, substitute lemon with lime.
  • 3 tablespoons olive oil Can substitute with avocado oil.
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • to taste salt and pepper Adjust according to preference.
For the Chicken
  • 4 pieces boneless, skinless chicken breasts Can substitute with skinless chicken thighs for more flavor.
  • 1 slice jalapeño (optional) Add for heat.

Method
 

Preparation
  1. In a bowl, mix together lime juice, cilantro, olive oil, minced garlic, cumin, salt, and pepper.
  2. Place the chicken breasts into the marinade and let them sit for at least 15 minutes.
Cooking
  1. Preheat your grill or skillet over medium heat.
  2. Cook the chicken for about 5-7 minutes on each side or until the internal temperature reaches 165°F (75°C).
  3. If your sauce is too thick, feel free to add a splash of water for that perfect consistency.
Serving
  1. After cooking, let the chicken rest for a few minutes before slicing.
  2. Top your chicken with additional chopped cilantro and lime wedges for enhanced presentation.

Notes

For meal prep, store leftovers in an airtight container for up to 4 days. Freeze cooked portions for longer storage.
