Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the Cinnamon Toast Crunch cereal and chocolate chips if using.
- Scoop tablespoon-sized balls onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are golden and the centers look slightly underbaked.
- Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For additional flavor, consider a light drizzle of cinnamon icing or a sprinkle of sea salt on top. They can be paired with ice cream or kept simple with a glass of milk. Avoid overmixing and ensure correct oven temperature to prevent tough cookies.
