  • 3 pieces ripe bananas (mashed) Use very ripe bananas for best flavor and moisture.
  • 1 cup all-purpose flour Measure by spooning into the cup and leveling.
  • 1/2 cup granulated sugar Can be substituted with brown sugar for deeper flavor.
  • 1/4 cup unsalted butter (melted) Can substitute with oil if needed.
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan lightly.
  2. In a mixing bowl, mash the ripe bananas until mostly smooth.
  3. Stir in melted butter until well combined, then add eggs and vanilla; mix thoroughly.
  4. In another bowl, whisk together flour, sugar, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture without overmixing.
  6. Pour batter into the prepared loaf pan and bake for 60 minutes or until a toothpick comes out clean.
  7. Allow cooling for 10 minutes before transferring to a wire rack.

Notes

Serve warm or at room temperature. Spread butter, cream cheese, or nut butter on a slice. Store cooled bread in plastic wrap or an airtight container at room temperature for 2-3 days, or freeze slices for up to 3 months.
