Preparation
  1. Start by gathering all your ingredients and chopping everything finely for an even texture.
  2. If using fresh corn, grill or boil it briefly for a sweet pop of flavor. For canned, drain and rinse for a fresher taste.
Mixing
  1. In a large mixing bowl, combine corn, red onion, bell peppers, and jalapeño.
  2. In a small bowl, whisk together lime juice, olive oil, salt, and pepper, then pour over the corn mixture.
  3. Gently stir the mixture for an even distribution of flavors. Garnish with cilantro.
  4. Taste your salsa! Adjust lime juice, salt, or add more spice if needed.

Notes

For a lighter version, substitute olive oil with avocado oil. This recipe is naturally gluten-free.
