  • 3-4 pounds Corned beef brisket
  • to cover meat Water
  • 1 large Onion, quartered
  • 3 medium Carrots, chopped
  • 2 stalks Celery, chopped
  • 1 medium Cabbage, cut into wedges
  • 3 cloves Garlic, minced
  • Spices (included in brisket) Typically includes coriander, mustard seeds, and peppercorns

Preparation
  1. Start by rinsing the corned beef under cold water to remove excess salt.
  2. Gather all your other ingredients.
Cooking
  1. Place the corned beef in a large pot or slow cooker.
  2. Add water until the meat is fully covered, and toss in the quartered onion, garlic, carrots, celery, and the spice packet.
  3. Bring the water to a boil, then reduce heat to low and simmer covered for about 2 hours, or until the meat is tender.
  4. Once the corned beef is done, add the cabbage to the pot.
  5. Cook for an additional 15-20 minutes or until the cabbage is tender but still vibrant green.
  6. Slice the corned beef against the grain and serve with a generous portion of cabbage and vegetables.

Notes

Use a pressure cooker to reduce cooking time significantly—your corned beef will be tender and ready in just 70 minutes. Rinse the meat to prevent a salty dish and ensure to include the spice packet for flavor.
