Ingredients

Main Ingredients
  • 3 cups cooked corned beef, shredded For a healthier option, consider lean corned beef.
  • 4 cups cabbage, chopped Try savoy cabbage for a sweeter profile.
  • 2 cups potatoes, diced Sweet potatoes work great too!
  • 1 cup shredded cheese Go for low-fat cheese or dairy-free for alternatives.
  • 1 cup sour cream Greek yogurt can be a healthier substitute.
  • 1 tablespoon Dijon mustard For a tangy kick, switch it with horseradish.
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Breadcrumbs or crushed crackers for topping Optional, but adds a delightful crunch!

Method

Preparation
  1. Preheat your oven to 350°F (175°C) to get the heat going for a perfect bake.
  2. In a large bowl, combine the shredded corned beef, chopped cabbage, diced potatoes, sour cream, Dijon mustard, garlic powder, salt, and pepper.
  3. Pour the mixture into a greased baking casserole dish.
  4. Top the mixture with your shredded cheese and breadcrumbs or crushed crackers for that extra crunch.
Baking
  1. Place in the preheated oven for 30-35 minutes, until bubbly and the top is golden.
  2. Let it cool for a few minutes before serving. This allows the flavors to meld beautifully.

Notes

Tip: For time-saving, prepare your vegetables the night before or use pre-cooked corned beef. Consider gluten-free breadcrumbs for a gluten-free option. To make it vegan, replace corned beef with jackfruit and use cashew cream instead of sour cream.
