Ingredients

  • 1 cup cottage cheese (preferably low-fat)
  • 2 large eggs
  • 1/4 cup honey or maple syrup For sweetness

  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Optional

  • 1/2 cup dried fruits (like cranberries or raisins) Optional

Method
 

Preparation
  1. In a large bowl or blender, combine the cottage cheese, eggs, and honey. Blend until smooth.
  2. In another bowl, whisk together the rolled oats, baking soda, baking powder, salt, and cinnamon.
  3. Gradually fold the wet ingredients into the dry mixtures until just combined.
  4. Gently fold in the nuts and dried fruits if you choose to add any.
  5. Grease a loaf pan or line it with parchment paper.
Baking
  1. Pour the batter into the prepared pan and bake in a preheated oven at 350°F (175°C) for about 45 minutes, or until a toothpick comes out clean.
  2. Allow to cool before slicing, and enjoy!

Notes

Store leftover bread in an airtight container at room temperature for up to three days. For longer storage, freeze slices and pop them in the toaster straight from the freezer for a quick breakfast option.
