  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (14.5 oz) diced tomatoes (with green chilies) for an extra kick
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup diced bell peppers (optional) for added crunch

Method
 

Preparation
  1. In a skillet, brown the ground beef or turkey over medium heat until fully cooked, about 5-7 minutes. Drain excess fat.
  2. In the slow cooker, combine the browned meat, diced onion, garlic, drained black beans, corn, and diced tomatoes. Stir in the chili powder, cumin, salt, and pepper.
Cooking
  1. Cover and cook on low for 4-6 hours or high for 2-3 hours, ensuring everything is heated through and flavors meld nicely.
  2. In the last 15-20 minutes of cooking, sprinkle cheese on top. Cover to let it melt before serving.

Notes

Store leftovers in an airtight container for 3-4 days in the refrigerator or freeze for up to 3 months. To prepare ahead, chop vegetables and brown meat the night before, then combine everything in the slow cooker in the morning.
