Ingredients

Main Ingredients
  • 2 cups Pasta (rotini or farfalle) Cook according to package instructions.
  • 2 medium-sized Chicken Breasts, grilled and diced Season with salt and pepper.
  • 4 cups Romaine Lettuce, chopped
  • 1 cup Caesar Dressing Can be store-bought or homemade.
  • 1/2 cup Parmesan Cheese, grated
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Croutons For topping.
  • Optional Fresh Parsley, for garnish

Method

Cooking Pasta
  1. In a large pot, boil salted water. Add pasta and cook according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
Grilling Chicken
  1. Season chicken breasts with salt and pepper. Grill on medium-high heat for about 6-7 minutes per side, or until fully cooked. Let it rest for a few minutes before dicing into bite-sized pieces.
Preparing the Salad
  1. In a large bowl, combine the cooked pasta, grilled chicken, chopped romaine, halved cherry tomatoes, and Caesar dressing. Toss gently until everything is well coated.
  2. Sprinkle grated Parmesan cheese and top with croutons for that delightful crunch. Toss once more to distribute.
Serving
  1. Enjoy immediately, or let it chill in the refrigerator for 30 minutes to let the flavors meld.

Notes

For a tangy twist, substitute lemon juice with lime. Use Greek yogurt instead of mayonnaise in your dressing for a lighter version. You can replace pasta with spiralized zucchini or quinoa for a gluten-free option.
