- Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook until golden brown on each side, about 5-7 minutes. Season with salt and pepper.
- In the same skillet, add chopped onions and garlic, sautéing until soft. Pour in the heavy cream and chicken broth. Mix in thyme and paprika, stirring until combined.
- Prepare rice according to package instructions while the chicken simmers. For added flavor, cook rice in chicken broth instead of water.
- Once chicken is cooked thoroughly, pour the creamy sauce over it, allowing it to simmer for another 5-10 minutes. If your sauce is too thick, add a splash of water.
- Spoon the creamy chicken and sauce over the rice and enjoy!
Notes
For a tangy twist, consider substituting the lemon with lime. Use gluten-free rice for dietary needs. Leftovers can be stored in an airtight container for up to 3 days.
