  • 4 pieces Chicken Breasts, boneless and skinless For tenderness
  • 1 cup Heavy Cream or Coconut Milk For a lighter version
  • 1 cup Chicken Broth Low sodium preferred
  • 2 cloves Garlic, minced Or use garlic powder
  • 1 medium Onion, finely chopped
  • 1 teaspoon Thyme, fresh or dried
  • 1 teaspoon Paprika Adds a hint of warmth
  • 1 cup Rice, white or brown
  • 2 tablespoons Olive Oil For sautéing
  • to taste Salt and Pepper
  • 1 tablespoon Lemon Juice Optional for brightness

Cooking
  1. Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook until golden brown on each side, about 5-7 minutes. Season with salt and pepper.
  2. In the same skillet, add chopped onions and garlic, sautéing until soft. Pour in the heavy cream and chicken broth. Mix in thyme and paprika, stirring until combined.
  3. Prepare rice according to package instructions while the chicken simmers. For added flavor, cook rice in chicken broth instead of water.
  4. Once chicken is cooked thoroughly, pour the creamy sauce over it, allowing it to simmer for another 5-10 minutes. If your sauce is too thick, add a splash of water.
  5. Spoon the creamy chicken and sauce over the rice and enjoy!

Notes

For a tangy twist, consider substituting the lemon with lime. Use gluten-free rice for dietary needs. Leftovers can be stored in an airtight container for up to 3 days.
