Ingredients

Main Ingredients
  • 1 lb ground beef (or ground turkey for a lighter option) 80/20 gives richer flavor; leaner cuts make it lighter.
  • 1 cup orzo pasta Small pasta that soaks up sauce beautifully.
  • 1 medium yellow onion, finely diced For flavor base.
  • 3 cloves garlic, minced Essential aromatic.
  • 1 can (14–15 oz) crushed tomatoes For body and consistency.
  • 1 cup beef broth (or low-sodium vegetable broth) Liquid base for the sauce.
  • 1/2 cup heavy cream or full-fat Greek yogurt For silkiness.
  • 2 tbsp tomato paste For concentrated tomato flavor.
  • 1 tsp dried oregano Herb for flavor enhancement.
  • 1/2 tsp red pepper flakes (optional) Adjust to taste for heat.
  • 2 tbsp olive oil For sautéing.
  • to taste salt and freshly ground black pepper To season.
  • for garnish Fresh basil or parsley, chopped Adds freshness when serving.
  • for serving Grated Parmesan or Pecorino Romano Optional cheese garnish.

Method

Preparation
  1. Warm up your pan, gather ingredients, and season the ground beef with a pinch of salt and pepper. Pre-measure liquids for a smooth one-pan flow.
Browning the Beef
  1. Heat 1 tbsp olive oil over medium-high heat. Add the beef, breaking it up with a wooden spoon. Cook until well-browned—about 5–7 minutes. Transfer to a bowl and set aside, leaving juices in the pan.
Sauté Aromatics
  1. Add the remaining oil and then the onion. Sauté until translucent. Add garlic and tomato paste; cook until fragrant, about 30–60 seconds.
Toast Orzo and Combine
  1. Add uncooked orzo and toast briefly in the pan, stirring constantly. Pour in crushed tomatoes, broth, and return the beef to the pan. Stir in oregano and season.
Simmering
  1. Bring to a simmer, cover, and cook until orzo is al dente and most liquid is absorbed—about 10–12 minutes, stirring occasionally.
Finishing Touch
  1. Remove from heat and stir in cream or Greek yogurt. Taste and adjust salt and pepper. Garnish with fresh basil and grated cheese.

Notes

This dish can be personalized with various substitutes, such as Greek yogurt instead of cream for a tangy twist, or using leaner meats for a healthier option.
