Crispy Air Fryer Chicken & Mozzarella Wraps

Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts Fresh chicken breast
  • 1 cup breadcrumbs Or almond flour for a gluten-free option
  • 1/2 cup grated parmesan cheese
  • 2 pieces eggs For coating
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
For the Wraps
  • 4 pieces large tortillas Whole wheat or gluten-free
  • 1 cup fresh mozzarella cheese, shredded
  • 1 cup mixed vegetables Bell peppers, spinach, or any favorites
  • Optional: Fresh basil or arugula for garnish

Method
 

Preparation
  1. Begin by preheating your air fryer to 400°F (200°C).
  2. In a bowl, whisk the eggs together. In another bowl, combine breadcrumbs, parmesan cheese, garlic powder, paprika, salt, and pepper.
Coat the Chicken
  1. Dip each chicken breast into the egg wash, allowing excess to drip off.
  2. Next, coat the chicken well in the breadcrumb mixture.
Air Fry the Chicken
  1. Place the coated chicken into the air fryer basket in a single layer. Cook for approximately 10 minutes, then flip and cook for an additional 5-10 minutes, or until the chicken is golden and cooked through.
Assemble the Wraps
  1. Once the chicken is done, slice it into strips.
  2. Lay out your tortillas and layer with chicken strips, shredded mozzarella, and your choice of mixed vegetables.
Finish in the Air Fryer
  1. Roll the wraps tightly and place them back in the air fryer. Cook for 3-5 minutes, just until the tortilla is crispy.
Serve Immediately
  1. Serve your delightful wraps warm, and don’t forget an optional garnish of fresh basil or arugula!

Notes

You can substitute lemon juice with lime juice for a tangy twist while marinating the chicken. Consider using zucchini noodles for a low-carb alternative.
