  • 2 large onions, sliced into thin rings
  • 1 cup buttermilk (or almond milk for a dairy-free option)
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1 cup breadcrumbs (panko or whole-wheat for added fiber)
  • 1 cup grated Parmesan cheese (or nutritional yeast for a vegan substitute)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste

Method
 

Preparation
  1. Slice the onions into thin rings and separate them.
  2. Soak the rings in buttermilk for at least 30 minutes for added moisture.
Create the Coating
  1. In a bowl, mix flour, garlic powder, paprika, salt, and pepper.
  2. In another bowl, combine breadcrumbs with grated Parmesan cheese.
Coat the Onion Rings
  1. Remove the onion rings from buttermilk, letting excess drip off.
  2. Coat each ring in the flour mixture, then dip back into buttermilk, and finally coat with the breadcrumb mixture. Press gently to ensure it adheres.
Bake
  1. Preheat your oven to 425°F (220°C).
  2. Place the coated rings on a baking sheet lined with parchment paper.
  3. Spray lightly with cooking oil for an extra crunch.
  4. Bake for 15-20 minutes, flipping halfway through for even crispiness.
Serve
  1. Once golden brown and crispy, let them cool slightly. Enjoy them plain or with your favorite dipping sauce!

Notes

For a tangy twist, substitute lemon juice with lime in the buttermilk mix, or toss in some chili flakes for a spicy kick. These can be stored in the fridge in an airtight container for up to 2 days and can be frozen uncooked.
