  • ½ cup Parmesan Cheese, grated optional, for topping

Preparation
  1. Start by dicing your veggies and cutting the chicken into bite-sized pieces for even cooking.
  2. For a smokier flavor, season your chicken with Cajun spices before cutting it.
Cooking
  1. Place the chicken, diced onion, bell peppers, and minced garlic in the slow cooker.
  2. Top with chicken broth and cream cheese.
  3. If your sauce is too thick, you can add a splash of water or more chicken broth.
  4. About 30 minutes before serving, add the uncooked penne pasta directly to the slow cooker with additional chicken broth.
  5. Stir occasionally to prevent sticking.
  6. When the pasta is cooked, stir in Parmesan cheese (if using) and garnish with green onions.

Notes

This recipe is versatile; use whole-grain pasta or low-fat cream cheese for healthier options. For a vegan twist, replace cream cheese with cashew cream.
