Ingredients

Main Ingredients
  • 2 pounds chicken breast lean protein source
  • 6 slices jalapenos fresh or pickled for a tangy bite
  • 8 oz cream cheese for creaminess
  • 1 cup shredded cheese cheddar or a blend for depth of flavor
  • 1 cup chicken broth or vegetable broth for a vegetarian twist
  • 1 tablespoon garlic powder for flavor enhancement
  • 1 teaspoon onion powder adds richness
  • 1 teaspoon paprika for a smoky touch
  • Salt and pepper to taste

Method

Preparation
  1. Rinse the chicken breasts under cold water and pat them dry. For even cooking, consider cutting the breasts in half.
Layering Ingredients
  1. Place the chicken breasts at the bottom of the crockpot. Layer the cream cheese, jalapenos, shredded cheese, garlic powder, onion powder, paprika, salt, and pepper on top.
Adding the Liquid
  1. Pour the chicken broth over the mixture, ensuring the chicken is almost covered. This will help everything cook down nicely.
Cooking
  1. Cover and set your crockpot to low for 4 hours or high for 2 hours. The chicken should be tender and easily shredded with forks.
Finishing Touches
  1. Once cooked, shred the chicken directly in the crockpot and mix everything well. For a thicker consistency, let it cook for an additional 10–15 minutes uncovered.

Notes

For a spicy kick, add a dash of cayenne pepper or switch up the cheeses to a pepper jack! You can also prepare everything the night before and keep it stored in the slow cooker base in your fridge.
