Preparation
- Season the chicken breasts with salt, pepper, and oregano, and place them at the bottom of your crockpot.
- Scatter the sliced bell pepper and minced garlic on top of the chicken.
- Pour the can of diced tomatoes (with juice) over the mixture and add the olives.
- Drizzle the olive oil and lemon juice over everything.
- Cover and set your crockpot on low for 6-8 hours or high for 3-4 hours.
- Once cooked, sprinkle feta cheese on top before serving, allowing it to melt slightly.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Freezing portions in freezer-friendly bags is also an option for up to 3 months.
