  • 4 pieces boneless, skinless chicken breasts or thighs Use thighs for a richer flavor.
  • 1 can (14 oz) diced tomatoes You can use fresh tomatoes if preferred.
  • 1 large red bell pepper, sliced Consider using a variety of colorful bell peppers.
  • 1/2 cup Kalamata olives, pitted Adjust based on your olive preference.
  • 1/4 cup crumbled feta cheese Substitute with low-fat feta if desired.
  • 1/4 cup olive oil Olive oil can be adjusted for lower fat options.
  • Juice of 1 lemon lemon Lime can be used as a substitute.
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • a pinch of crushed red pepper flakes Optional for added heat.

Method
 

Preparation
  1. Season the chicken breasts with salt, pepper, and oregano, and place them at the bottom of your crockpot.
  2. Scatter the sliced bell pepper and minced garlic on top of the chicken.
  3. Pour the can of diced tomatoes (with juice) over the mixture and add the olives.
  4. Drizzle the olive oil and lemon juice over everything.
  5. Cover and set your crockpot on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, sprinkle feta cheese on top before serving, allowing it to melt slightly.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Freezing portions in freezer-friendly bags is also an option for up to 3 months.
