Main Ingredients
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup barbecue sauce choose your favorite!
  • 1 can crushed pineapple in juice, drained (20 oz) or fresh pineapple
  • 1/2 piece onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce for an umami boost
  • to taste Salt and pepper
Optional Flavor Enhancers
  • a pinch cayenne pepper for heat
  • to taste smoked paprika for depth
  • to taste fresh cilantro or green onions as a garnish

Method
 

Preparation
  1. Chop your onion and mince the garlic.
Cooking
  1. Place the chicken at the bottom of the crockpot.
  2. Layer the garlic, onion, crushed pineapple, and pour the barbecue sauce over it.
  3. Sprinkle with salt and pepper, and add soy sauce if using.
  4. Secure the lid and set the crockpot on low for 4-6 hours or high for 2-3 hours.
  5. Once fully cooked, shred the chicken using two forks and stir to combine.

Notes

If the sauce is too thick, add a splash of water or pineapple juice for desired consistency. You can also use a remote thermometer to monitor cooking progress.
