- Chop your onion and mince the garlic.
Cooking
- Place the chicken at the bottom of the crockpot.
- Layer the garlic, onion, crushed pineapple, and pour the barbecue sauce over it.
- Sprinkle with salt and pepper, and add soy sauce if using.
- Secure the lid and set the crockpot on low for 4-6 hours or high for 2-3 hours.
- Once fully cooked, shred the chicken using two forks and stir to combine.
Notes
If the sauce is too thick, add a splash of water or pineapple juice for desired consistency. You can also use a remote thermometer to monitor cooking progress.
