  • 2 large eggs
  • 1 cup water or milk Use milk for a richer flavor
  • 1/2 cup unsalted butter, softened Substitute with coconut oil for a dairy-free option
Frosting and Decorations
  • 1 can frosting (cream cheese recommended) Try adding food coloring for vibrant frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line your cupcake tray with colorful cupcake liners.
  3. In a large bowl, combine the cake mix, eggs, milk (or water), and softened butter. Mix on medium speed for about 2 minutes until smooth.
  4. Using a cupcake scoop, fill each liner about two-thirds full with batter.
Baking
  1. Place the tray in the preheated oven and bake for 15-20 minutes, or until a toothpick comes out clean.
  2. Once baked, transfer the cupcakes to a wire rack to cool completely for approximately 30 minutes.
Frosting and Decoration
  1. Once cooled, frost generously with your chosen frosting and add food coloring if desired.
  2. Top with blue sprinkles and crushed graham crackers to complete the beach-themed look.

These cupcakes can be stored in an airtight container for up to 3 days at room temperature or up to a week in the fridge. They freeze well for up to 3 months.
