Ingredients
  

For the Marinade
  • 1 cup Soy sauce For marinating
  • 2 tablespoons Honey Can substitute with orange juice for a tropical twist
  • 1 teaspoon Fresh ginger, grated
  • 2 cloves Garlic, minced
For the Kabobs
  • 1 pound Chicken breast, cut into 1-inch cubes
  • 1 cup Pineapple chunks Fresh preferred, canned works too
  • 1 each Red bell pepper, cut into bite-sized pieces
  • 1 each Yellow bell pepper, cut into bite-sized pieces
  • 1 medium Red onion, cut into wedges
  • to taste Salt
  • to taste Pepper
  • as needed Skewers, soaked in water for at least 30 minutes if wooden

Method
 

Preparation
  1. In a mixing bowl, whisk together the soy sauce, honey, grated ginger, and minced garlic.
  2. Place the chicken cubes in the marinade, ensuring all pieces are well-coated. Cover and refrigerate for at least 30 minutes.
Assembly
  1. On soaked wooden skewers, alternate threading chicken, pineapple chunks, bell peppers, and onion wedges to create a colorful arrangement.
Grilling
  1. Heat your grill to medium-high, about 400°F (200°C).
  2. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F (75°C).
Serving
  1. Once cooked, remove the kabobs from the grill and let them rest briefly before serving. Enjoy your kabobs with a side of rice or a fresh salad.

Notes

For added flavor, marinate the chicken the night before. Pre-cut your veggies on weekends for quick access. Consider using tofu for a vegan option or shrimp for a variation.
