Preparation
- Lay out a damp kitchen towel on a clean cutting board. Arrange all filling components in line for easy grabbing.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, and sesame oil. Add warm water gradually until smooth.
- Fill a shallow dish with warm water. Submerge one rice paper wrapper for 6–8 seconds, then lay it flat on the damp towel.
Assembly
- Place a handful of greens, herbs, vermicelli (if using), vegetables, and protein on the bottom third of the wrapper.
- Fold the bottom over the filling, tuck in the sides, and roll tightly.
- Place seam-side down and repeat until all ingredients are used.
Serving
- Serve with creamy peanut sauce and garnish with chopped peanuts and lime.
- Optional: Slice rolls in half before serving.
Notes
For meal prep, store components separately to prevent sogginess. Assemble on the day of consumption for best results.
