Preparation
- Peel the bananas and slice them into quarters.
- Spread a generous layer of peanut butter on half of the banana pieces, then top each with the remaining pieces to create a ‘sandwich.’
Freezing
- Place the assembled banana sandwiches on a baking sheet lined with parchment paper and freeze for about 1-2 hours until solid.
Coating
- In a medium bowl, mix dark chocolate and coconut oil. Melt them together in the microwave in 30-second intervals, stirring until smooth.
- Dip each frozen banana sandwich into the melted chocolate, allowing excess chocolate to drip off. Sprinkle chopped nuts immediately for that signature crunch.
Final Freeze
- Return the coated sandwiches to the parchment-lined sheet and freeze until the chocolate is set.
Notes
If your chocolate gets too thick, add a splash of coconut oil to thin it out. These treats can last up to a month in an airtight container in the freezer.
