  • 4 pieces ripe bananas for natural sweetness
  • 1 cup peanut butter natural preferred for health benefits
  • 1 cup dark chocolate (70% cocoa or higher) for a rich flavor
  • ½ cup almonds or peanuts, chopped for crunch
  • 2 tablespoons honey or maple syrup optional, for added sweetness
  • 2 tablespoons coconut oil to help chocolate melt smoothly

Preparation
  1. Peel the bananas and slice them into quarters.
  2. Spread a generous layer of peanut butter on half of the banana pieces, then top each with the remaining pieces to create a ‘sandwich.’
Freezing
  1. Place the assembled banana sandwiches on a baking sheet lined with parchment paper and freeze for about 1-2 hours until solid.
Coating
  1. In a medium bowl, mix dark chocolate and coconut oil. Melt them together in the microwave in 30-second intervals, stirring until smooth.
  2. Dip each frozen banana sandwich into the melted chocolate, allowing excess chocolate to drip off. Sprinkle chopped nuts immediately for that signature crunch.
Final Freeze
  1. Return the coated sandwiches to the parchment-lined sheet and freeze until the chocolate is set.

Notes

If your chocolate gets too thick, add a splash of coconut oil to thin it out. These treats can last up to a month in an airtight container in the freezer.
