Ingredients
  

For the marinade
  • 1 lb chicken breast, cut into bite-sized cubes You can use skinless chicken thighs for more flavor.
  • 1/2 cup grated Parmesan cheese Consider substituting with nutritional yeast for a dairy-free option.
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste Season generously.
  • Wooden or metal skewers If using wooden skewers, soak in water for 30 minutes.

Method
 

Preparation
  1. In a mixing bowl, whisk together olive oil, minced garlic, grated parmesan cheese, Italian seasoning, salt, and pepper.
  2. Add the chicken cubes to the bowl and stir well to coat each piece evenly. Let this marinate for at least 15 minutes.
Cooking
  1. Thread the marinated chicken pieces onto the skewers, leaving a little space in between each piece.
  2. Preheat the grill or grill pan to medium-high heat.
  3. Grill skewers for about 6-8 minutes on each side, or until the chicken is cooked through with an internal temperature of 165°F (75°C).
  4. Remove from heat and let rest for a couple of minutes. Serve warm and enjoy!

Notes

Tip: If the marinade is too thick, add a splash of water or chicken broth for richness. Leftover skewers can be stored in an airtight container in the fridge for up to three days.
