Preparation
- In a mixing bowl, whisk together olive oil, minced garlic, grated parmesan cheese, Italian seasoning, salt, and pepper.
- Add the chicken cubes to the bowl and stir well to coat each piece evenly. Let this marinate for at least 15 minutes.
Cooking
- Thread the marinated chicken pieces onto the skewers, leaving a little space in between each piece.
- Preheat the grill or grill pan to medium-high heat.
- Grill skewers for about 6-8 minutes on each side, or until the chicken is cooked through with an internal temperature of 165°F (75°C).
- Remove from heat and let rest for a couple of minutes. Serve warm and enjoy!
Notes
Tip: If the marinade is too thick, add a splash of water or chicken broth for richness. Leftover skewers can be stored in an airtight container in the fridge for up to three days.
