Ingredients

For the Skewers
  • 1.5 pounds Chicken breast or thighs for tender meat
  • 1-2 Bell peppers colorful additions that add sweetness
  • 1 large Red onion for added flavor depth
  • 1 medium Zucchini to incorporate more veggies
For the Marinade
  • 1/4 cup Olive oil provides moisture
  • 2 tablespoons Lemon juice adds bright acidity
  • 3 Garlic cloves, minced enhances the savory flavor
  • 1 tablespoon Smoked paprika provides a smoky kick
  • to taste Salt and pepper essential seasonings

Method

Preparation
  1. In a bowl, mix olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper. Whisk it together until well combined.
Marination
  1. Cut the chicken into 1-inch cubes and place it in the marinade. Ensure all pieces are coated. Cover and refrigerate for at least 1 hour or overnight for the best flavor.
Veggie Preparation
  1. While the chicken marinates, chop bell peppers, red onion, and zucchini into similar-sized pieces for even cooking.
  2. Tip: Use skewers soaked in water for 30 minutes if using wooden ones, to prevent burning.
Skewer Assembly
  1. Alternate threading chicken and vegetables onto skewers. If your sauce is too thick, add a splash of water to achieve a perfect consistency.
Grilling
  1. Preheat your grill to medium-high heat. Cook the skewers for 10-15 minutes, turning occasionally until the chicken is cooked through, reaching an internal temperature of 165°F.
Serving
  1. Serve hot off the grill with your favorite sides.

Notes

For a tangy twist, substitute lemon juice with lime or explore adding soy sauce for an Asian-inspired flavor! Use turkey for leaner skewers or plant-based chicken substitutes for a vegan version.
