Method
Marinate the Chicken
- In a bowl, mix olive oil, paprika, oregano, cumin, salt, and pepper.
- Coat the chicken breasts with the marinade.
- Cover and refrigerate for at least 30 minutes, or overnight if time allows.
Prepare the Salsa
- In a separate bowl, combine diced tomatoes, cucumber, red onion, parsley, and lemon juice.
- Season with salt and pepper to taste. Set aside.
Grill the Chicken
- Preheat your grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. It should have nice grill marks and an internal temperature of 165°F (75°C).
Warm the Tortillas
- In the last 5 minutes of grilling, wrap your tortillas in foil and place them on the grill to warm up.
Assemble the Tacos
- Slice the grilled chicken into strips.
- Layer the chicken on the warm tortillas, top with salsa, and any additional veggies or sauces.
Serve
- Enjoy immediately with garnishes like feta cheese, avocado, or a dollop of Greek yogurt if desired.
Notes
Feel free to experiment with different types of vegetables or sauces to customize your tacos. Marinating overnight enhances the flavor significantly.
