  • 2 pieces Bell Peppers (red, yellow, or green) Chopped into 1-inch pieces
  • 1 medium Zucchini Chopped into 1-inch pieces
  • 1 medium Red Onion Sliced into wedges
  • 1 cup Cherry Tomatoes Whole
  • 3 tablespoons Olive Oil Use infused varieties for extra flavor
  • to taste Salt
  • to taste Pepper
  • to taste Herbs (fresh thyme or rosemary) Optional for additional flavor

Method
 

Preparation
  1. Wash and chop bell peppers and zucchini into 1-inch pieces. Slice red onion into wedges.
Marination
  1. In a bowl, whisk olive oil, salt, pepper, and your choice of herbs.
  2. Toss the vegetables until well-coated. Let them marinate for at least 10 minutes for maximum flavor.
Assembly
  1. Thread vegetables onto skewers, alternating colors for aesthetics.
  2. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
Grilling
  1. Preheat the grill to medium heat.
  2. Place skewers on the grill and cook for 10-15 minutes, turning periodically.
  3. Aim for a nice char, but avoid overcooking.
Serving
  1. Once grilled, remove from the heat and let sit for a few minutes.
  2. Feel free to sprinkle fresh herbs on top for an added touch.
