Ingredients
  

Vegetables
  • 1 medium Zucchini, sliced into rounds
  • 1 Red Bell Pepper, cut into strips
  • 1 Yellow Bell Pepper, cut into strips
  • 1 Eggplant, cubed
  • 1 Red Onion, cut into wedges
Marinade
  • 1/4 cup Olive Oil or avocado oil for a neutral flavor
  • 3 tablespoons Balsamic Vinegar for a rich taste
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried Oregano or Italian seasoning
  • Salt and Pepper, to taste

Method
 

Preparation
  1. In a bowl, combine olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper. Whisk until well blended.
  2. Place the sliced vegetables in a large mixing bowl or a resealable zip-top bag. Pour the marinade over the veggies and toss well to coat. Let it marinate for at least 10 minutes.
Grilling
  1. Preheat your grill to medium-high heat (about 400°F / 200°C).
  2. Arrange the marinated vegetables on a grill-safe tray or grill basket. Grill the vegetables for about 10 minutes, tossing occasionally until they are nicely charred and tender.
Serving
  1. Remove from the grill, and enjoy hot as a side dish or a topping for salads and grain bowls.

Notes

For a tangy twist, substitute lemon juice with lime juice. Use vegetable broth instead of oil for an oil-free option. Add proteins like chickpeas or beans for a more filling meal.
