  • 2 cups White or Brown Rice Choose your favorite for a hearty base
  • Vegetables: Bell peppers, carrots, and snap peas For added color and crunch
  • 2 stalks Green Onions For a fresh garnish
  • 2 cloves Garlic A must for flavor
  • 1 inch Fresh Ginger Adds zest; use ground ginger if unavailable
  • 2 tbsp Soy Sauce Low-sodium versions available
  • 1/4 cup Cilantro Optional, but great for garnish
Bang Bang Sauce
  • 1/2 cup Mayonnaise Or substitute with Greek yogurt for a lighter version
  • 2 tbsp Sriracha Adjust to spice tolerance
  • 1 tbsp Honey or Maple Syrup For sweetness

Method
 

Preparation
  1. Cook rice according to the package instructions, adding a little salt to the water for flavor.
  2. In a large skillet over medium heat, add a drizzle of olive oil, then sauté minced garlic and ginger until fragrant.
  3. Add ground turkey, season with soy sauce, and cook until browned thoroughly.
Cooking
  1. Toss in chopped bell peppers, snap peas, and carrots. Stir-fry for about 5 minutes or until veggies are tender yet crisp.
  2. In a small bowl, mix together mayonnaise, sriracha, and a touch of honey or maple syrup to prepare the Bang Bang sauce.
Assembly
  1. Layer cooked rice in bowls, top with turkey and veggie mix, and drizzle generously with bang bang sauce.
  2. Garnish with chopped green onions and cilantro.

Notes

For an extra kick, toss in some chopped jalapeños or switch to spicy mayo in your bang bang sauce. Store in airtight containers for up to four days.
