For the Chicken
  • 4 pieces Chicken breasts Boneless and skinless for lighter options
  • 1/4 cup Honey Local honey adds a richer flavor
  • 1/4 cup Lime juice Freshly squeezed is preferred
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil For grilling
  • Salt & pepper Essential for flavor enhancement
For the Mango Salsa
  • 1 Ripe mango Diced; adjust sweetness based on ripeness
  • 1/2 Red onion Diced; adds crunch and flavor
  • 1/4 cup Fresh cilantro Chopped
  • 1 Jalapeño Finely chopped; adjust based on spice preference

Method
 

Marinating Chicken
  1. In a zip-top bag, mix honey, lime juice, olive oil, minced garlic, salt, and pepper. Add the chicken breasts, seal, and massage the bag to coat evenly. Let marinate for at least 10 minutes.
Preparing Salsa
  1. While the chicken marinates, combine diced mango, red onion, cilantro, jalapeño, and a pinch of salt in a bowl. Stir gently, then set aside.
Grilling Chicken
  1. Preheat your grill (or grill pan) over medium heat. Remove chicken from marinade, discarding excess marinade. Grill each breast for 6-7 minutes per side, or until the internal temperature reaches 165°F.
Serving
  1. Place the grilled chicken on plates and generously top it with mango salsa. Drizzle any remaining juices over the chicken for extra flavor.

Notes

Marinate the chicken in the honey-lime glaze overnight to enhance flavors and cut down on prep time. For lower-calorie options, opt for skinless chicken thighs or reduce the honey to cut down on sugar.
