  • 1 cup mixed vegetables frozen or fresh, such as peas, corn, or carrots
  • 1 cup protein shredded chicken, crumbled sausage, or tofu for a vegetarian option
  • 2 tablespoons soy sauce or tamari for gluten-free options
  • 1 tablespoon sesame oil or olive oil
  • 2 pieces green onions sliced for garnish
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large skillet, heat the sesame oil over medium heat until shimmering.
  2. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  3. Stir in your chosen protein and mixed vegetables. Cook until the vegetables are tender and the protein is heated through, about 5-7 minutes.
  4. Add the cooked rice, breaking up any clumps. Stir well to combine all ingredients.
  5. Pour in the soy sauce, mixing thoroughly. Season with salt and pepper to taste.
  6. Cook for another 2-3 minutes until everything is heated through. Garnish with green onions before serving.

Notes

Tip: If your dish is too thick, add a splash of water or broth to reach your desired consistency. Store leftover Jailhouse Rice in airtight containers in the refrigerator for up to 4 days, or freeze for up to 3 months when well-sealed.
