  • 2 cups Rice (white or brown, or cauliflower rice)
  • 1 cup Bell peppers (any color)
  • 1 cup Carrots (julienned)
  • 1/4 cup Green onions (sliced)
Marinade
  • 1/4 cup Soy sauce Consider low-sodium for a healthier option.
  • 2 tablespoons Brown sugar (or coconut sugar) Can substitute with honey or agave.
  • 1 tablespoon Sesame oil
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
Toppings
  • 2 tablespoons Sesame seeds
  • 1 cup Kimchi (optional) Adds a spicy kick.
  • to taste Sriracha or Gochujang sauce For extra heat.

Method
 

Preparation
  1. In a bowl, combine soy sauce, brown sugar, sesame oil, garlic, and ginger to make the marinade. Whisk until smooth.
  2. Slice the steak into thin strips and add it to the marinade. Let it sit for at least 10 minutes.
Cooking
  1. Prepare rice according to package instructions. If using brown rice, account for a slightly longer cooking time.
  2. In a skillet over medium heat, add a drizzle of oil and sauté the bell peppers and carrots until slightly tender, about 3-5 minutes.
  3. Increase the heat to high, add the marinated steak strips, and cook for about 3-4 minutes until they reach your desired doneness.
Assembly
  1. In bowls, layer rice followed by the sautéed vegetables and cooked steak. Drizzle with additional sauce if desired and sprinkle with sesame seeds.

Notes

For a more intense flavor, consider marinating the steak overnight. If the sauce becomes too thick, add a splash of water before cooking.
