Ingredients
  

For the Meatballs
  • 1 lb ground beef
  • 1 cup dry breadcrumbs
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Filling
  • 1 cup shredded cheddar cheese
  • 2 cups cooked elbow macaroni
For the Topping
  • 1/2 cup barbecue sauce

Method
 

Preparation
  1. Preheat oven to 400°F.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, salt, and pepper. Mix until well incorporated.
  3. Scoop about 2 tablespoons of the beef mixture and flatten it into a patty. Place a spoonful of the cooked macaroni and shredded cheese in the center, then fold the meat around it to completely enclose the filling.
Cooking
  1. Arrange the stuffed meatballs on a baking sheet lined with parchment paper.
  2. Bake for 18-20 minutes, until the meatballs are cooked through.
  3. Remove from oven and drizzle the tops of the meatballs with the barbecue sauce.

Notes

Serve hot on a tray for guests. Add extra barbecue sauce on the side for dipping. For more flavor, consider using ranch or a simple hot sauce.
