Preparation
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment.
- In a bowl, mash the bananas until mostly smooth.
- Stir in the melted butter to the mashed bananas.
- Mix in the sugar, beaten egg, and vanilla extract until blended.
- Sprinkle the baking soda and salt over the wet mix. Stir gently.
- Add the flour and fold until just mixed. Do not overmix.
- Fold in the chopped walnuts or chocolate chips.
- Pour batter into the prepared pan and smooth the top.
Baking
- Bake for 55 to 65 minutes, or until a toothpick comes out clean or with a few moist crumbs.
- Let the bread cool in the pan for 10 minutes. Then remove and cool on a rack.
Notes
Slice it warm or at room temperature. Serve plain, with butter, or with a light spread of cream cheese. It pairs well with coffee, tea, or milk. For a treat, warm a slice and add a spoon of yogurt or ice cream. Use very ripe bananas for best sweetness and moisture. Avoid overmixing the flour to keep the bread tender.
