Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment.
  2. In a bowl, mash the bananas until mostly smooth.
  3. Stir in the melted butter to the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract until blended.
  5. Sprinkle the baking soda and salt over the wet mix. Stir gently.
  6. Add the flour and fold until just mixed. Do not overmix.
  7. Fold in the chopped walnuts or chocolate chips.
  8. Pour batter into the prepared pan and smooth the top.
Baking
  1. Bake for 55 to 65 minutes, or until a toothpick comes out clean or with a few moist crumbs.
  2. Let the bread cool in the pan for 10 minutes. Then remove and cool on a rack.

Notes

Slice it warm or at room temperature. Serve plain, with butter, or with a light spread of cream cheese. It pairs well with coffee, tea, or milk. For a treat, warm a slice and add a spoon of yogurt or ice cream. Use very ripe bananas for best sweetness and moisture. Avoid overmixing the flour to keep the bread tender.
