Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine grated carrots, cottage cheese, applesauce, and vanilla extract. Whisk until smooth.
  3. In another bowl, blend almond flour, baking powder, cinnamon, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until fully incorporated.
  5. If using nuts or additional flavorings, fold them in gently.
  6. Pour the batter into a greased baking dish and bake for about 25 minutes, or until a toothpick comes out clean.
  7. Allow the bars to cool before cutting into squares. For extra flavor, top with yogurt or a light cream cheese frosting.

Notes

If the batter is too thick, add a splash of almond milk to achieve desired consistency. Store bars in an airtight container in the refrigerator for up to one week or freeze for longer storage. Separate bars with parchment paper.
