Ingredients

Main Ingredients
  • 1 pound boneless, skinless chicken breast, diced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs Consider using whole wheat for a healthier option.
  • 2 pieces eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • optional Fresh herbs like parsley or basil For extra flavor.

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the diced chicken with garlic powder, onion powder, salt, and pepper, ensuring every piece is coated evenly.
  3. In one bowl, whisk the eggs. In another bowl, combine the breadcrumbs with grated Parmesan cheese.
Coating and Baking
  1. Dip each piece of chicken into the egg mixture, letting the excess drip off, and then roll it in the Parmesan breadcrumb mix until fully coated.
  2. Place the coated chicken pieces on the prepared baking sheet and bake for 15-20 minutes or until golden brown and cooked through.
  3. Once out of the oven, let them cool for a few minutes. Serve with your favorite dipping sauce.

Notes

If your sauce is too thick, add a splash of water to reach the desired consistency. Consider prep-ahead by cutting chicken earlier in the day to save time.
