  • 2 pieces Fresh Peaches Ripe peaches, cut into wedges
  • 1 cup Blueberries Fresh blueberries
Salad Base
  • 4 cups Mixed Greens Such as spinach and arugula
Toppings
  • ½ cup Feta Cheese, crumbled Substitute with vegan feta for a dairy-free option
  • ½ cup Walnuts, chopped Or pecans for a different texture
Dressing
  • 2 tablespoons Honey Use agave syrup for a vegan alternative
  • 4 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice Substitute with lime or balsamic vinegar if desired
  • Salt and Pepper To taste

Method
 

Preparation
  1. Wash and slice the fruits: Rinse the peaches and blueberries. Slice the peaches into thin wedges.
  2. Prepare the greens: In a large salad bowl, add your mixed greens.
Assembly
  1. Add the fruits: Gently toss in the sliced peaches and blueberries, distributing them evenly throughout the greens.
  2. Make the dressing: In a small bowl, whisk together the olive oil, honey, lemon juice, salt, and pepper until emulsified.
  3. Combine and serve: Drizzle the dressing over the salad and sprinkle the crumbled feta and chopped walnuts on top. Toss gently.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for up to 2 days. Keep dressing separate until ready to eat to avoid wilting.
