Preparation
  1. Start by washing, peeling, and pitting your peaches. Cut them into chunks.
  2. If you prefer a smoother texture, consider blanching the peaches for a minute in boiling water, then plunging them into ice water before peeling.
Blending
  1. In a blender, combine the chopped peaches, sugar, lemon juice, and a pinch of salt.
  2. Blend until smooth, but leave some small chunks for texture if desired.
Chilling
  1. Pour the mixture into a shallow dish and place it in the freezer for about 20 minutes.
  2. Stir every 5 minutes to ensure an even freeze.
