Preparation
- Combine soy sauce, minced ginger, and garlic in a bowl. Add the chicken, ensuring it’s well coated. Let it marinate for at least 10 minutes.
- In a medium pot over medium heat, bring 2 cups of water to a boil. Add your rice, cover, and reduce to low heat for 15 minutes, or until fluffy and water is absorbed.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes on each side until golden brown and cooked through.
- Once the chicken is cooked, add the diced bell pepper and pineapple. Sauté for an additional 3-4 minutes until the veggies are tender.
- Fluff the cooked rice with a fork and stir it into the skillet. Mix well to combine all ingredients.
Serving
- Garnish with green onions and sesame seeds before serving. Enjoy your tropical meal!
Notes
For a tangy twist, substitute lemon juice with lime juice! For health-conscious alternatives, use quinoa instead of rice or replace the soy sauce with gluten-free tamari sauce.
