Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs (or breasts) For a leaner option
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil For sautéing
For the Rice and Veggies
  • 1 cup jasmine or basmati rice
  • 2 cups water For cooking rice
  • 1 cup fresh pineapple, diced Canned works too!
  • 1 tablespoon sesame seeds Optional, for garnish

Method
 

Preparation
  1. Combine soy sauce, minced ginger, and garlic in a bowl. Add the chicken, ensuring it’s well coated. Let it marinate for at least 10 minutes.
  2. In a medium pot over medium heat, bring 2 cups of water to a boil. Add your rice, cover, and reduce to low heat for 15 minutes, or until fluffy and water is absorbed.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes on each side until golden brown and cooked through.
  2. Once the chicken is cooked, add the diced bell pepper and pineapple. Sauté for an additional 3-4 minutes until the veggies are tender.
  3. Fluff the cooked rice with a fork and stir it into the skillet. Mix well to combine all ingredients.
Serving
  1. Garnish with green onions and sesame seeds before serving. Enjoy your tropical meal!

Notes

For a tangy twist, substitute lemon juice with lime juice! For health-conscious alternatives, use quinoa instead of rice or replace the soy sauce with gluten-free tamari sauce.
