Ingredients
  

For the Chicken
  • 1 pound boneless skinless chicken breasts, diced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
For the Salsa
  • 1 cup fresh pineapple, finely diced Substitute mango for a sweeter flavor.
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice Or lemon juice for a different citrus twist.
For the Tacos
  • 8 small corn or flour tortillas

Method
 

Preparation
  1. Toss the diced chicken in a bowl with olive oil, smoked paprika, chili powder, garlic powder, and salt until evenly coated.
  2. Heat a large skillet over medium-high heat. Add the chicken in a single layer and cook undisturbed for 3 minutes to develop a crust. Stir the meat and continue cooking for another 4 to 5 minutes until fully cooked through. Remove from heat.
  3. Combine the diced pineapple, red onion, cilantro, and lime juice in a small bowl to make the salsa.
  4. Warm the tortillas in a dry skillet or microwave.
  5. Assemble your tacos by adding the cooked chicken and topping generously with the fresh salsa.

Notes

For healthier alternatives, use grilled chicken instead of pan-fried, swap whole wheat tortillas, and replace olive oil with avocado oil. Serve with black beans or rice, and add avocado or jalapeƱos for extra flavor.
