Ingredients
  

Main Ingredients
  • 1 package whole-grain ravioli (or your choice of pasta)
  • 3 cups marinara sauce Opt for low-sodium or homemade for a healthier option.
  • 2 cups shredded mozzarella cheese
  • 1 cup spinach (fresh or frozen, thawed) Can substitute with other leafy greens.
  • 1 cup mushrooms, sliced
  • 1 teaspoon garlic powder
Optional Garnish
  • to taste fresh basil For garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the marinara sauce, garlic powder, and any additional spices you love. If your sauce is too thick, add a splash of water.
Layering
  1. Layer half of the ravioli on the bottom of a greased 9x13 baking dish.
  2. Follow with half of the spinach, half of the mushroom slices, and a sprinkle of mozzarella cheese.
  3. Repeat the layers with the remaining ingredients, ending with a generous layer of cheese on top.
Baking
  1. Cover the dish with aluminum foil and bake for 20 minutes.
  2. Remove the foil and continue baking for an additional 10 minutes to brown the cheese.
  3. Let it cool for a few minutes before serving. Garnish with fresh basil for extra flavor.

Notes

To light up the casserole, consider replacing ravioli with spaghetti squash. Ensure not to overcook the vegetables.
