  • 1 pound pork sausage (or chicken sausage for a lighter option) You can use turkey sausage for a healthier version.
  • 2 cups broccoli florets Fresh or frozen can be used.
  • 1 bell pepper, sliced (any color) Feel free to choose your favorite color.
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation
  1. In a large skillet, heat a drizzle of olive oil over medium heat. Add the sausage, breaking it up with a spatula. Cook until browned and cooked through, about 5-7 minutes.
  2. Add the sliced onion and garlic to the skillet. Sauté for 2-3 minutes until aromatic.
  3. Add the remaining vegetables—broccoli, bell pepper, and zucchini—and cook for another 5-7 minutes.
  4. Stir in the Italian seasoning, salt, and pepper. Cook for an additional 2-3 minutes until the veggies are tender yet crisp.

Notes

For a tangy twist, substitute the lemon with lime. If your sauce is too thick, add a splash of water. For an extra kick, toss in some chili flakes. Portion leftovers in airtight containers for up to 3 days or freeze for quick meals later on.
