Method
 

Preparation
  1. Wash the russet potatoes thoroughly, prick them with a fork and microwave for about 5 minutes.
  2. Allow potatoes to cool and then cut them into quarters.
  3. Drizzle with olive oil and sprinkle generously with salt and pepper.
Cooking
  1. Preheat the Blackstone griddle to medium heat for about 5 minutes.
  2. Place the seasoned potatoes on the griddle in a single layer and cook for about 10 minutes, flipping halfway through.
  3. After 10 minutes, sprinkle shredded cheese and crumbled bacon over the potatoes; allow to melt for 3-5 minutes.
Serving
  1. Remove from griddle and top with sour cream, green onions, and any additional toppings like jalapeƱos or chives.
  2. Serve and enjoy!

Notes

Microwaving potatoes can significantly reduce cooking time. Store leftovers in an airtight container for up to three days.
