  • 4 pieces boneless, skinless chicken breasts
  • 2 cups fresh corn kernels (or frozen corn)
  • 1 cup sour cream (Greek yogurt for a healthier alternative) Substitute lime juice for some of the sour cream for a tangy twist.
  • 1 cup shredded cheese (cheddar or cotija are excellent)
Spices
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (adjust to taste)

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the slow cooker.
  2. In a bowl, combine corn, sour cream, cheese, chili powder, cumin, garlic powder, onion powder, and cayenne.
  3. Pour the corn mixture over the chicken, ensuring it’s well coated.
Cooking
  1. Cover the slow cooker and set to low for 4 hours or high for 2 hours.
Serving
  1. Once cooked, shred the chicken with two forks right in the slow cooker.
  2. Sprinkle with fresh cilantro before serving.

Notes

If the sauce is too thick, add a splash of water to loosen it up. For personalized dietary adjustments, consider substituting the chicken with beans for a vegetarian version. Store leftovers in an airtight container in the fridge for up to 4 days or freeze the prepared chicken.
